Eggless Walnut Brownie


A simple eggless walnut brownie to pamper yourself and indulge into a scrumptious dessert.

Ingredients:
Maida/All purpose flour : 160 gms
Baking powder : 1 tspn
Baking soda : 1/2 tspn
Dark Chocolate : 120 gms
Water : 100 ml
Castor sugar : 2 tblspn
Condensed milk : 200 gms
Vanilla essence : 1 tspn
Walnuts : 1/2 cup chopped

Ingredients

  • Melt butter and chocolate and whisk in condensed milk.
  • Add hot water, castor sugar and vanilla essence.

  • Sieve maida/all purpose flour, baking soda, baking powder and gently fold in. 
  • Mix half of chopped walnuts and fold in.


  • Pre heat oven at 200 degrees.
  • Meanwhile grease or line a brownie pan or 8 inch cake pan with butter paper and pour in the batter.























  • Add remaining walnuts over the batter and bake it for 35 mins.
  • Serve it hot with a scoop of ice cream and chocolate sauce.

Eggless Churros with chocolate sauce

The best way to indulge in to chocolate is dipping hot churros into melting chocolate sauce.
























Ingredients:

Maida : 130 gms
Baking powder : 1/2 tspn
Water : 200 ml
Oil : 2 tblspn to knead flour and 200 ml to 300 ml for deep frying.
Cream : 100 ml
Dark Chocolate chunks : 100ml
Butter : 1 tspn
Cinnamon powder : 1 tspn
Sugar : 2 tspns and 2 tblpsn

Method:

  • Sieve maida/all purpose flour, 2 teaspoons of sugar and baking powder in to a bowl.
  • Boil 200 ml of water and 2 tblspn of oil.

  • Pour boiling water into all purpose/ maida and mix with a spatula or ladle. Make sure no lumps are formed.

  • Once the mixture is cooled down knead it with your hand gently by adding 1 to 2 tspns of oil.

  • Pipe this mixture into a piping bag and pipe it out gently on a plate. You can pipe out dough into desirable size and shape. 
  • Meanwhile heat oil on medium flame. Drop a small ball of dough to check the heat.
  • Once the oil is hot enough to fry, drop in churros gently and fry them until they turn golden brown.

  • Transfer fried churros into a plate covered with paper towel or tissue. Wait until excess oil is removed.
  • In another plate, add 2 tblspns of fine sugar and 1 tspn of cinnamon powder and mix them.

  • Roll out churros in sugar and cinnamon mixture and transfer them into serving plate.

  • For chocolate sauce. pour in cream into a non deep pan and boil it on simmer until you see small bubble on sides of the pan. Stir it gently and boil on low flame for 3 to 4 minutes.
  • Take it off the flame and add chocolate chunks and butter. Let it sit for 2 mins and whisk it until chocolate melts completely.


  • If the chocolate doesn't melt, put it back on low flame for 30 secs and take it off the flame and whisk again.

  • Transfer hot chocolate sauce into a serving bowl and serve it with churros.

Taco Twist


Taco Twist

Ingredients:

Taco shells : Few
Mixed boiled veggies : 1 cup (I used steamed sweet corn, boiled potatoe, kheera and carrot)
Mixed fruits : 1 cup (I used apple, strawberries, black and green grapes, pomagranate)
Mayonise : 2 tblspn
Pepper powder : 1 tspn
Salt : As per taste
Lemon juice : 1 tspn
Honey : 1 tspn
Chat masala : 1/2 tspn

Method:

  • For veggie taco, mix all diced veggies, mayonise, salt and pepper and keep it aside.

  • For fruit taco, mix all diced fruits, honey, lemon juice and chat masala.

  • Stuff taco shells with veggies or Fruits just before serving.

Caramel custard or Cream Caramel

Caramel custard

Luscious caramel custard to tempt your taste buds and your loved one's.


Ingredients
Heavy whipping cream : 50 ml cream
Full fat milk : 200 ml milk
Sugar : 1.25 tbsp sugar
Vanilla extract : 1/4 tbsp vanilla essence
Agar Agar : 3.75 gms agar agar powder

For the caramel
Sugar : 1.25 tbsp sugar
Water : 1 tspn


Method
  • To prepare caramel. Place a small pan on low flame and add sugar and water. After 5 mins, sugar slowly turns into caramel from the sides of the pan. Gently stir sugar with a wooden spatula or spoon.
  • In 7 to 8 mins sugar will turn into thick caramel syrup. It it becomes too thick add little water and dilute.
  • Pour this caramel mixture into 4 small ramekin.
  • Place a deep and bottom pan on medium flame and pour in full fat milk and heavy whipping cream.
  • Let it boil on medium flame for a while until you see small bubble on sides of the pan.
  • Now add sugar and vanilla essence and mix.
  • Turn flame to low and let it boil on for 5 more mins.
  • Once agar agar is completely dissolved pour the mixture into ramekins.
  • Place ramekins in fridge for 2 to 3 hours.
  • Serve it chilled with whipped cream.

Classic Panna Cotta

Valentine's week special. 


Classic Pannacotta with strawberry sauce. Its an Italian delicacy which has rice creamy texture that melts in your mouth. 

Ingredients:
Heavy whipping cream : 150 ml
Milk : 100 ml
Sugar : 5 tblspn or as per your taste
Agar Agar : 1/2 tspn if it is in powder form. or 2 to 3 gms if it is in strips form
Vanilla essence : 1 tspn
Strawberries : 1 cup chopped
Sugar : 2 tblspns
Water : 2 tblspns

Method :
  • Take a heavy deep bottom pan. Pour in cream and and milk. Place the pan on low flame and boil it until you see bubbles on sides of the pan.
  • Now add sugar to it and stir. Let it boil for few more minutes and add vanilla essence.
  • Now add agar agar to it and gently stir until it is completely dissolved.
  • You can see the texture getting thick. 
  • Turn off the flame and pour the mixture into ramekins.
  • Pop them into fridge for 1 hour to 2 hours.
  • Meanwhile make strawberry sauce. Take a heavy deep bottom pan and add chopped strawberries, water and sugar.
  • Put the pan on low to medium flame and let it cook for about 5 mins. Gently stir in.
  • After 10 mins, when strawberries become tender, gently press them with the back of a ladle.
  • Once strawberries are completely cooked and becomes soft, turn off the flame and strain it into a serving bowl.
  • While serving, unmould pannacotta by running a knife through edges and transfer pannacotta into a serving plate and pour strawberry sauce over it.

Soya Ragada Pani Puri


Ingredients:
Soya beans soaked over night and boiled : 1 Cup.
Soya nuggets : 1/4 cup soaked in warm water.
Oil : 1 tblspn
Mustard seeds : 1/4 tspn
Cumin seeds : 1 tspn
Onions : 1/4 cup chopped
Turmeric : 1/2 tspn
Tomato puree : 2 tblspn
Salt : As per taste
Red chilly powder : 2 tspns
Cumin powder : 1 tspn
Coriander seed powder : 1 tspn
Boiled potato : 1 small
Chat masala : 1/2 tspn
Dry mango powder : 1/4 tspn
Garam masala : 1/4 tspn
Coriander leaves : Few chopped.

Method : 

  • Heat oil in a pan on medium flame.
  • Add cumin seeds and mustard seeds. Let it splutter.
  • Now add chopped onions and fry them until they become translucent. Add turmeric powder and saute.

  • Add tomato puree, salt and red chilly powder. 

  • Let it cook on low flame for about 2 to 3 mins. Now add boiled soya beans.

  • Add cumin seed powder, coriander seed powder, garam masala, dry mango powder and saute.
  • Add soaked soya nuggets, boiled potato and 200 ml of water and let it cook on low flame for about 5 to 6 mins.


  • Once it is cooked, add chat masala and coriander leaves and mix.

  • Turn off the flame and serve it as a filling for pani puri.

Putchka / Pani Puri


Ingredients:
Boiled potato : 2 medium size
Boiled kala chana : 1/2 cup
Salt : As per taste
Red chilly powder : 2 tspn
Chat masala : 1 tspn
Black salt : 1/4 tspn
Dry Mango powder : 1/4 tspn
Jeera powder : 1/2 tspn
Coriander seed powder : 1/2 tspn
Lemon juice : 1/2 tspn
Chopped onions : 1 tblpsn
Chopped coriander leaves/dhania : Few

Method:

  • Take a bowl and add boiled potatoes, and other dry ingredients. 
  • Mash and mix all the ingredients. 
  • Now add boiled kala chana, lemon juice, chopped onions and coriander leaves.
  • Serve it as filling in pani puri.
