Keep calm and eat pie.
Ingredients :
Mango Puree : 3 tblspn
Cream cheese : 2 tbplsn (At room temperature)
Whipped cream : 1 tblspn
Agar Agar : 3 gms soaked in 1/4 cup of water.
Good day cookies : 4 to 5
Butter : 1.5 tspn
Castor Sugar : 1.5 tpsn or As per your taste.
(I used 4 inch pie tin so all the ingredients which i mentioned above are enough to fill a 4 inch pie tin)
Method :
- Take good day cookies into a blender and add butter to it.
- Pulse them until it becomes wet sand like mixture.
- Now transfer this mixture into a pie tin and gently press and spread it around with back of a spoon.
- Now transfer this tin into fridge and chill it for 1 hr
- After 1 hour, pour 2 tblspn of mango puree, whipped cream, sugar and cream cheese into blender and pulse twice or thrice.
- Now place a pan on medium flame and add water and agar agar into the pan.
- Stir in occasionally and let agar agar melt completely. Turn the flame to simmer.
- Now add 1 tblspn of mango puree into the pan and mix it with agar agar.
- Let it simmer for 2 mins. Turn off the flame and add it to cream cheese mixture.
- Once cream cheese mixture and agar agar mixture is incorporated, pour this mixture on to cookie pie crust.
- Place pie tin in fridge and let it chill and undisturbed for 4 to 5 hours.
- Before slicing or serving this pie, unmold pie from pie tin and decorate it with mango slices and serve it with whipped cream.
