Veggie stuffed Idly

Aren't you all bored of eating plain old fashioned idly ?

I am sure there are many mothers out there forcing their kids to eat it just like my mom used to force me to eat it when i was a kid.

As i grew up, my mom started inventing many variations with idly batter.

Watching her techniques, I have tried once such variation which took plain old fashioned idly to whole new level.


Here are the ingredients and step by step method for veggie stuffed idly.

Serving : 3.

Ingredients:
Potatoes : 1 large boiled, peeled and mashed.
Sweet corn kernels : 1/2 cup
Carrots : 1/2 cup diced.
Onions : 1/4 cup chopped
Salt : as per taste.
Red chilly powder : as per taste.
Green chilies : 1 Tbspn
Dry red chilly flakes : 1 tbspn.
Cumin and mustard seeds : 1tspn
Turmeric powder : 1/4 tspn
Coriander powder : 1/4 tspn.
Idly batter
Oil : 1 tblspn

Method :


  • Chop onions, carrots, green chilies and mash boiled potato. 
  • Either boil or steam sweet corn 

  • Now place a pan on medium flame and add oil.
  • Once oil is heated up add cumin and mustard seeds.
  • After two mins add onions, green chilies and red chilies. and turmeric powder and saute.

  • Turn the flame to low and let onions cook until they become translucent.
  • Now add carrots and sweet corn, salt and saute well.

  • If you can see from above picture, I removed green and red chilies after they were sauted in oil.
  • Most people dont like to get a bit of green chilly or red chilly, so once chilies had infused their flavors in to oil, i removed it from the pan.
  • Now add red chilly powder and saute on low flame.
  • After 3 to 4 mins add mashed aloo into the pan.

  • Mix aloo with other ingredients in to pan. 
  • Add coriander seed powder and coriander leaves and close the lid,
  • Let it cook on low flame for 3 to 4 mins.
  • You can add 2 to 3 drops of lemon juice to get a tangy flavor.

  • Now fill half of the idly pan with idly batter.
  • Now place each idly pan with with veggie mixture.
  • Do not over fill it.
  • Press veggie mixture gently down with the back of your spoon.
  • Now pour idly batter over the veggie mixture to cover it.
  • Now steam these idlies and set a side to cool down.
  • Once is removed from the idly pan serve it with any chutney.
