Atlu - Rice and wheat flour instant dosa.

Atlu - Its an instant dosa made from the mixture of Rice flour and wheat flour.

Traditionally it is been served with jaggery syrup or sugarcane syrup in coastal line of Andhra, Tamilnadu, and Karnataka.

In few regions of Telangana, it is served with karampodi and pitlakura.

It is so easy to make, you can prepare it in no time.



Ingredients:

Rice Flour : 2 and 1/3 cups
Wheat flour : 1 cup
Salt : As per your taste.
Water : Enough to prepare semi liquid batter.
Oil : Enough to drizzle on dosa pan.

Method:

  • Mix all dry ingredients well.



  • Now add water gradually and mix flour.
  • Make sure there are no lumps in the batter.
  • Batter should not be too liquid nor too thick. 



  • Set it aside. Meanwhile place a non stick dosa tawa on medium flame and drizzle some oil.
  • You might need a glass like this to pour atlu on non stick tawa.



  • Once tawa is hot enough, pour batter on non stick tawa.
  • Drizzle some oil on the edges of batter on non stick tawa.
  • Increase flame from medium to high.

  • You can adjust the heat by reducing the flame.
  • You can see small bubbles while you pour batter on tawa.
  • Once it is cooked properly, bubbles will disappear. 
  • At his point you can flip attu and let it cook on other side.

  • Once it is cooked on both the sides, transfer it to a serving plate.
  • You can serve it with any chutney of your choice. 
  • In summer you can eat it with fully ripen mango juice. Its a little heaven in our mouth to enjoy with mango juice.
