Orange and chocolate Muffins - Eggless




One my most favorite seasonal fruit is Nagpur Orange.

The pure taste and aroma of Nagpur Orange is blissful. I do not hesitate to say Nagpur Oranges tastes better than California Orange which we find in super market.

Being a mad mad fan for desi Orange, I couldn't kept my hands off them and legs off from my kitchen.

So I have decided to make orange muffins for my mom. But having an intense affair with chocolate, i couldn't resist adding chocolate to it.

So I have made two different muffins. One is Orange muffins and the other one is chocolate orange muffins.

Here is the recipe.



Ingredients:

Maida / All purpose flour : 150 gms
Condensed Milk : 150 ml
Butter : 100 gms
Juice of Nagpur Oranges : 1/2 glass apprx 150 ml
Vanilla essence or orange essence : 1/4 tspn
Powdered sugar : 1/3rd cup
Baking powder : 1 tspn
Baking Soda : 1/2 tspn
Chocolate ganache : 2 tbspn
Chocolate powder : 1 tspn
Cashew nuts and almonds : 1/4th cup each soaked in warm water and roughly chopped.

Method:

  • Melt 100 gms butter in a large bowl. 



  • Add 150 ml of condensed milk to melted butter.



  •  Add 150 ml orange juice.


  •  Add 1/4th tspn of vanilla essence,


  •  Mix all wet ingredients together.


  •  Measure Maida to 150 grams and sift it through a sieve.


  •  Add 1 tspn Baking powder.


  • Add 1/2 tspn Baking soda.


  •  Add 1/3rd cup of powdered sugar to sieve. (This is completely optional if you like your cake to be less than moderate sweet) 

  •  Sieve all dry ingredients together in to the bowl.
  • Through away hard particles that get deposited in sieve.


  •  Sifting flour, maida, sugar, baking powder and baking soda creates air and gives your cake a good raise while baking. 
  • Mix all dry ingredients and wet ingredients with out lumps.


  •  Add soaked and chopped cashews and almonds.


  •  Mix the batter either clock wise or anti clock wise direction only. 


  •  Do not over mix the batter with your ladle in different directions. Make sure your cake batter is ribbon consistency.


  •  I have dusted 7 muffin molds with flour. Mean while i have also pre heated my oven at 180 degrees Celsius. 


  • Fill the muffin molds with plain orange batter upto half of the molds. Do not over fill the batter more than half of it as it raises above muffin rim. 
  • After filling up 5 molds with plain orange batter, i have added chocolate ganache and mixed it well in to the remaining batter.



  •  I have also added 1 tspn of chocolate powder for extra kick from chocolate :P


  •  I mixed chocolate ganache and chocolate powder enough to fill 2 muffin molds.
  • I popped all muffin molds into pre-heated oven and baked it for 15 to 20 mins at 180 degrees.

  • After 15 to 20 mins, you can see your muffins raised above the rim of molds. You can do a toothpick test to check whether your muffins are baked completely. 
  • Just prick your muffin with either tooth pick or knife and remove. If it comes out clean your muffins are completely baked. If it does not you need to bake it for 3 to 4 mins at same temperature.



  • Let your muffins cool down completely at room temperature. Mean while take some firm orange and peel the skin off.


  •  Take a pan, add 3 tspns of brown sugar and add 1/2 cup of water. Place the pan on medium flame and let sugar completely dissolve. 
  • Once the sugar gets dissolved turn the flame to medium to high and let the sugar syrup slightly thicken up to one spoon dropping consistency.
  • Add orange pods into the pan and let them soak completely into sugar syrup.
  • Turn orange pods in between to avoid burning them.
  • After two mins you can observe orange pods are bulged up as it soaked most of the sugar syrup. Now turn off the flame and keep it aside.


  •  I know one muffin mold is missing from the below pix. Me and my mom couldn't resist freshly baked hot muffins so we had unmold one muffin and ate it :P


  • Once are muffins are cooled down to room temperature serve them with caramelized orange and vanilla ice cream. Here is the pic of plain orange muffin with ice cream.
