Sarva Pindi
I remember my grand mother and her mother preparing sarva pindi during mansoons. Its the first thing I always wanted to munch on a rainy day.
Servings: 2 to 3

Cooking time : 10 Mins
Ingredients:
Rice flour : 2 1/2 cups
Spring onions : 2 or more as per your taste
Chana dal (Bengal gram split) : 1/4 cup
Sesame seeds (Til) : 2 tbsp
Salt : As per taste
Green chillies : 5 to 6 or more or less depends on your taste
Curry leaves : 1/4 cup
Water : Enough to kneed a dough
Oil : Enough for tawa fry

Method :
- Grind green chillies and curry leave in to a paste with out adding water.
- In bowl mix all ingredients except oil.
- Kneed flour in to dough and rest it for 5 to 10 mins by covering it with a muslin cloth or kitchen towel
- After 5 to 10 mins kneed again.
- Now take a deep and heavy bottom aluminium pan (Appr 8 to 10 inches diameter) and rub 3 to 4 tbsp on oil to the bottom of the pan.
- Take a tennis ball size of dough and place it in the middle of pan and press gently to the sides of the pan.
- You can spread roti as thin as you can if you want a crispy roti or you can make a thick roti if you want a chewy roti. How ever the size and shape may be it tastes amazing.
- Now with your pointing finger make holes in roti. This helps roti to cook evenly. It also help roti to absorb and release excess heat of the pan.
- Now pour 1 to 2 tbsp of oil over the roti.
- Now place the pan with the lid on medium flame and let it cook for 3 to 4 mins
- Now reduce the flame and let it cook for 1 more minute.
- If you made roti for about 1/2 inch thick, then let roti to cook on medium flame for 5 to 6 mins and 2 to 3 mins on low flame.
- Keep checking the bottom the roti. Once roti turns in to golder brown flip it and cook it on medium flame for 3 minutes.
- Once its cooked well transfer it into a serving tray. These rotis will remain fresh for 3 to 4 days.
- This can be served as snacks or breakfast.
- You can reduce the amount of oil if you cook it on a non stick tawa or in a grill oven.
