Bhojpuri style sabzi

Preparation : 10 mins
Cookins : 10 mins
Serves : 3

Ingredients :
Brinjal : 3 to 4 small
Baby potatoes : 250 gms
Tomatoes : 3 medium
Onions : 2 tbspn diced
Ginger Garlic paste : 1 tbspn
Turmeric : 1 tspn
Cumin : 1/2 tspn
Mustard : 1/2 tspn
Salt : As per your taste
Red chili powder : 2 tspns or more as per your taste.
Jeera powder : 1 tspn
Coriander powdre : 1 tspn
Methi seed powder : 1/4th tspn
Coriander leaves : few chopped
Ghee or Oil : 2 tbspn.
Garam Masala powder : 1/4 tspn

Method :
  • Boil potatoes and peel them. Char brinjal on direct flame. Peel the skin once they are cooled.
  • Chop charred brinjal, sprinkle some salt over it and keep them aside.
  • Now char Tomatoes too on a direct flame, peel the skin and grind them to a puree.
  • Now place aluminium pan on medium flame. Add oil.
  • Add cumin seed and mustard seeds and let it splutter.
  • Now add diced onions and little salt. Let it cook until onions become soft and tender.
  • Add turmeric and ginger garlic paste saute.
  • Now add Tomato puree and saute. Let it cook for 2 mins on medium flame.
  • Add chopped brinjal and saute.
  • Now add red chilly powder and saute.
  • Add boiled potatoes and saute. Close the lid and let it cook for 4 mins or until oil starts leave gravy
  • At the end add Garam Masala powder, jeera powder, coriander powder and methi seed powder. Saute until everything mix well. 
  • Turn off the flame, close the lid and let it sit for few mins. This helps veggies to get enough flavor our garam masala.
  • Serve it hot with rice or roti.
