Method :
- First dry roast the above whole masala except aam chur, black salt and normal salt.
- Let them cool down for few minutes. In a mixer jar add little salt and dry roasted masala to make them into a fine powder.
- Transfer masala powder into a jar, add aamchur powder and black salt and mix them. You can store them for 2 to 3 months or until the aroma stays.
- Now put a tawa on low flame. Add 2 tbspn (Frozen not melted) of butter on to it and add onions and tomato.
- Let it cook on tawa on low flame.
- The reason why we add frozen butter is it takes little time to melt down and by the time it melts down our veggies becomes softer and cooks well.
- Now add little salt. (We added salt in masala and in idly too. Make sure you dont add too much of salt to our veggies on tawa)
- Close the lid for 30 to 40 secs. Now add our masala powder and let it cook for 30 to 40 secs more.
- Now place our idly on to tawa and let press gently with a back of laddle or with roti turner.
- Sprinkle some masala over idly and add little butter more butter over idly.
- Let is fry with lid close for 20 secs and turn idly and press gently again.
- Let it fry evenly on both the sides.
- Now add chopped coriander leaves.
- Transfer it to a serving plate.
- Serve it hot either with chutney or just plain tawa idly.
Hope you liked the recipe. If you don't have much time in preparing masala powder just take 2 tspn of sambar powder add aamchur, dhania powder, jeera powder and salt.
