Cinnamon and chocolate chips cup cakes

Ingredients:

Maida - 100 gms
Powder Sugar - 75 gms
Flax seed paste: 1 tsp of flax seed mixed with 3 to 4 tsps of hot water
Butter - 75 gms
Baking powder - 1 tsp
Vanilla Essence - 1 tsp
Milk - 2 to 3 tsp
Cinnamon flavored chocolate Chips - half cup or handful of chocolate chips.

Method:

- Melt butter and baking powder in a bowl.



















- Add vanilla essence














- Now add powdered sugar and flax seed mixture and beat well.

- Now add half of the maida and fold in gently.














- Now add 2 tps of warm milk

- Now add rest of the maida nad fold in gently.

- Gradually beat the batter for 2 to 3 minutes with a ladle until smooth ribbons are formed.














- Now add cinnamon chocolate chips and fold in gently.













- Grease muffin mold with butter and dust it with maida and remove the excess flour by gently tapping the mold.














- Pour the cake batter into muffing mold with a spoon or ice cream scooper. Try to fill the batter upto 1/2 of the mold. Do not fill the mold completely.














- Now place the mold in a pre heated microwave and bake for 15 mins.

- Once cup cakes are baked, remove the molds from the microwave and let it cool down for some time.

- Once the cup cake are cooled down, run a knife on the edges and gently tap down the mold and remove the cup cakes on to a rack.














- You can serve it with chocolate sauce or just do the icing over the cup cakes and drizzle some chocolate chips and serve them.
