Kheera Halwa

Kheera Halwa

Ingrediants

  • 500 gms of kheera grated.
  • 150 gms of unprocessed sugar.
  • 50 gms of Ghee (clarified butter).
  • 1 spn of elaichi powder (Green cardamom powder).
  • 2 drops of kewra essence (Optional).
  • Almond and kismis/Raisins (Any dry fruit of your choice).
  • Green food color (Optional)


Method:
  • Grate Kheera and remove water from it
  • Place a pot on low flame and add clarified butter/Ghee.
  • Add grated kheera.
  • Stir for 2 mins and put the lid on.




  • Stir again after 5 mins and remove the lid and let the excess water from kheera evaporate.
  • Cook until raw smell of kheera is gone from the mixture.
  • Stir occasionally to avoid kheera sticking to the bottom of the pan and let water evaporate from pot.
  • Now add sugar and stir well.





  • Now put the lid on and let is cook for 5 mins.
  • Remove the lid and stir for couple of mins and add elaichi powder and kewra essance.



  •  Let it cook for another 10 mins or until you find ghee/clarified butter leaving the kheera mixture.





  • Now add food color (optional) and turn off the heat. 



  • Now take other pan and add a spoon of ghee/clarified butter and add dry fruits.



  • Stir for 2 mins and remove from the heat and add to kheera mixture when its hot and mix well and serve.
