Veg Galouti Kabab


Ingredients:
Rajma : 1 cup washed and soaked over night.
Mashed aloo / potato : 1/4 cup
Roasted Chana dal : 1/4 cup
Kalaunji/onion seeds : 1 tspn
Saunf/fennel seeds : 1/4 tspn
Shaajeera : 1/4 tspn
Dry red chilies : 2 or 3
Red chilly powder : 1 or 2 tspn
Salt : As per your taste
Jeera/Cumin seed Powder : 1/4 tspn
Coriander seed powder / Dhania powder : 1/4 tspn
Garam Masala : 1/4 tspn
Finely chopped onions : 1 tblspn
Cilantro / dhania leaves : few for garnish
Lemon wedges : 2
Chat masala : one or two pinches

Method:
  • Cook rajma either in pressure cooker or open vessel until they become tender. Do not over cook it.

  • Once it is cooked strain water from it and keep them aside on kitchen towel. This will help to remove excess water from rajma.
  • Now place a frying pan on medium flame. Add chana dal, kalaunji, shaajeera, fennel seeds and dry red chilies.

  • Dry roast them for 3 to 4 mins and take it off the flame.
  • Let it rest for a while until it comes down to room temperature.
  • Now transfer them into a blender and blend it into a fine powder.

  • Take another jar and add cooked rajma and blend it with out water.
  • Rajma mixture has to be little crumble not too smooth and not too crumble and dry.

  • Now transfer rajma into a mixing bowl. Add mashed potatoe/aloo, garam masala, salt, red chilly powder, cumin/jeera powder, coriander/dhania powder, cilantro/dhania leaves. Mix them all.


  • Now add chopped onions and chana dal masala powder and mix it.



  • Heat a non stick tawa on medium flame, add some oil. Let it heat moderately.
  • Mean while take a small lemon size quantity of rajma mixture. flatten it out a bit gently between your palms. It should be half inch thickness. 
  • Prepare atleast one batch of kababs to fry.
  • Once pan is moderatly hot, place these kababs on tawa.

  • Fry them on both side by brushing little oil on them.
  • Fry then until you see crispy texture on both the side and until they turn light brown.
  • Serve them hot with any chutney or sauce.
