Veg Shorba



Veg shorba is usally served as a complimentary for biryani in hotels. It adds more flavor to both biryani and pulav when served hot. 

Veg Shorba
Tomatoes: 3 to 4
Onions: 2 medium size + 1 tblspn roughly chopped.
Peanuts: ¼ cup
Sesame seeds: ½ tblspn
Almond powder : 1.5 tspn.
Red chilies : 2 or 3
Chana dal : 1 tblspn
Jeera / Cumin : 1 tspn
Laung / Cloves : 2
Dalchini : 1 inch
Coriander leaves : Few chopped
Mint Leaves : Few chopped
Red chilly powder : 1 or 2 tspns
Salt : As per taste
Garam masala powder : ¼ tspn
Coriander seed powder : ¼ tspn
Ginger garlic paste : ½ tspn
Turmeric : ¼ tspn
Oil : 3 to 4 tblpsn to fry tomatoes and onions.
Ghee : 1 tblspn
Whole masala : 2 or 3 cardamom, 2 cloves, 1 bay leaf, ½ tspn sajeera

Method :

·         Chop tomatoes and onions and fry them in oil.


·         Let them rest at room temperature and blend them in a blender.
·         Dry roast peanuts, sesame seeds, chana dal, jeera, laung and dalchini.


·         Blend them all in a blender into powder.


·         Heat ghee in a pan on medium flame, add whole masala and sauté.
·         Add onions and sauté until they turn translucent.


·         Add turmeric and ginger garlic paste, 1 slit green chilies and mix.



·         After 3 mins add tomato onion paste and mix.


·         Now add dry 1.5 tspn of masala powder, almond powder and mix. (Save rest of blended spices for later use)



·         Add salt, red chili powder, garam masala powder, coriander seed powder.





·         Mix all the ingredients and close the lid, turn the flame to low and let it cook for 5 to 6 min

.
·         Add water in case the gravy is too thick.
·         Serve it hot with biryani or pulav.




Note : You can replace either sesame seeds or peanuts with coconut or you can add coconut along with sesame seed and peanuts.

If you do not have almond powder you can even add roasted and powdered khus khus or cashews nut.
